Keeping Your Board Sanitized:
Wash your John Boos cutting board with hot soapy water after each use and dry with a clean towel or let it air dry. For further sanitation, the board can be rinsed with a vinegar or chlorine bleach solution. (1 teaspoon bleach to one quart of water/5-to-1 ratio of vinegar to water) Do not soak the board in water, this will damage the wood. Like all natural wood cutting boards, John Boos boards are not intended for the dishwasher.
Maintaining Your Board:
Oil your cutting board on all surfaces every 3-4 weeks to maintain the original Boos block cream finish with beeswax. Northern Hardwood for Higher Hardness
WoodForChef uses Northern Hardwoods (hard maple, cherry, walnut, birch) as they make the best cutting boards because they are more durable. Northern Hardwoods have a higher hardness because they grow more slowly. Their closed grain means they have small pores for a smooth surface . They won't dull your knife like plastic and glass boards.
Wood that is too soft will be easily scratched and damaged. A good cutting board normally has a Janka hardness between 900 and 1500 (the closer to 1500, the better). Hard Maple has a hardness of 1450, Cherry of 995, Walnut of 1010, Bamboo of 1180, and Birch of 1260.

Unique Character
Every tree is different and as such, every board has its own unique character.
HARD MAPLE : Is the go-to wood when it comes to wooden cutting boards. Maple's neutral color and subtle grain are a natural match for every kitchen. It provides an excellent cutting surface that holds well against daily chopping but doesn’t ruin a good cutting edge.
CHERRY : Makes for gorgeous cutting boards and if judging by color alone, cherry is the best of the bunch. A thick slab of deep red wood looks amazing no matter what you do with it.
WALNUT : Takes the cake as far as presentation go. If you want high-end, look no further. Walnut is prized for its rich, dark hue that can effectively mask everyday stains, as well as lend a chic look to your countertop. Mineral oil makes it extra shiny. Great walnut cutting boards require a very high level of craftsmanship.
Face grain
Face grain is considered the most attractive because it shows the full fibers of the wood. Long, narrow slats are glued together at their shorter ends, with the grain running horizontally along the cutting board (similar to a wood tabletop or cupboard door). Face grain is the most affordable of all the grain constructions and that makes it a good starter board. It is easier to handle with its lighter weight. Face grain cutting boards will show knife marks faster than edge grain or end grain boards and are not recommended for heavy chopping use but it is the most affordable of the three.
Edge grain
Edge grain boards are tougher than face grain boards and will soak up less moisture since the grain of the wood is not exposed. We still recommend you oil it regularly, but it's not as demanding as end grain boards are. Edge grain boards are a great balance between performance and ease of maintenance. Edge grain cutting boards can be thicker than face grain, giving the board more weight and body. Edge grain is a step up in both quality. It is similar to face grain in construction, the grain runs horizontally, but uses the thicker sides, or, as we call it, the ''edge'' of the wood.
End grain
End grain cutting boards offer the best performance in its high durability and ability to hide knife marks. End grain patterns are unique, they have a one of a kind aspect. It is the preferred choice among many professionals for its hard-wearing characteristics and traditional chopping block silhouette. Answer: | Don't know why you wish to size down but I would imagine a stainless steel 4.5 would work with your artisan 5 qt. mixer. Some have tried the glass bowl and said it works. .5 qt. = 2 cups more of flour etc. so I think it should not be a problem. Besides the 5 qt. mixer you have may have more watts to handle the mixing with ease in a 4.5 qt. mixing bowl. |
