| Answer: | Shiny does not equal soggy. Metal pans perform better than glass or ceramic as they heat up faster to allow your bottom crust to bake before getting sogged by your filling. So for a fruit filled pie I would recommend metal pie plates. If your blind baking your bottom crust any pie plate will do. |
