You can also use parchment paper on these pans if you worry about the perforations. It is a wonderful pan and I would highly recommend it for your bread needs, it creates perfect loaves.

Answer: I let the dough rise in a large bowl covered. Then form into my shape and put in the pan for the second rise and bake!
Question: Can anybody explain why the center is folded higher than the side edges
Answer: It gives more direct surface exposure to the heat without being shielded (the lower outer edges) for a crispy crunchy edge. This pan set work great for me when I make a couple of loaves of French bread. I do have a tendency to lay the formed dough nearer to the high middle edge so the outer edges don't drop off. It's a great pan!
