Answer:	This is the double edged sharper and there is a single one also. They are for Japanese knifes so the angle is sharper at 16 degrees.

Answer:	I checked the back label of the item. There is no mention of number of times refined nor times distilled. What it does state, "Quality is Purity" and it states to be 99.9994% pure. I have been using Colibri for several of years and have never had any issues with it.
