Answer:	In my opinion when it comes to cutting vegetables. The best for me is an 8 inch Santoku. Most of Santoku has hollow-edge depressions along the blade which the cut vegetables will not stick on the blade. Chef knife tend to have a solid flat sides that tend to have vegetables stick.

Answer:	Use a 220 wet stone on that knife and a diamond steel! Give it a good 10 - 20 minutes on a 220 wet stone at 15-20 degrees or it will be as dull as my brain!
