This means, if you want to tilt it and use spatula to move something out, it is a 2 preson job, onr to tile pan and 1 to use the spatula. I use mine on glass cooktop, so am extra careful. Toss steak in and let it sear should hear sizzling, if not, it wasn't hot enough. for 3/4" to 1" thick -- 2 minutes a side, if someone wants it more well than medium rare, take pan off heat and put lid on. until it is almost where they want it. Sit on a rack over a plate for about 10 minute rest and enjoy. Bought some marked down rib eyes that were thin, about 3/8" at Kroger last night. wife loved them because they were medium after the 4 minutes searing, 2 each side. I still enjoyed mine because tender and juicy. But I really prefer a steak I have to run to catch! Sorry for the digression!
