Answer: | That depends on whether its fully fermented when you receive it. I remember decades ago when buying from my local Korean grocer in NYC, sometimes it was just made so you had to leave it out for a day or two in warmer temperatures before it would be ready to eat. These days, all the kimchi I have bought at Korean grocers had been ready to eat right out of the jar. My package arrived at the peak - how could I tell? OMG, it was the stinkiest kimchi I ever had and even after transferring to airtight canning jars my garage fridge still fills the entire garage with kimchi smell after I open the door. And Kimchi is stinkiest when its at the peak of flavor. After that peak it generally lasts 2-4 weeks before it gets too sour, which is usually when we Koreans will use it in a kimchi stew (kimchi-jigae). And while kimchi predates refrigeration, cabbage and radish, the two most common vegetables used in kimchi, are essentially cold-weather crops. I remember that when I was in HS, I took my parents to pick Korean radishes at a Korean farm in NJ and we bought so much that my Mom decided to bury most of the radish kimchi she made in the backyard over the winter which is what Koreans would do in the old days. Really was not a success as she used too much salt (she had never done it before so she had to guess and it was not the right guess). |

Answer: | Although I've never ordered this particular kimchi product, not all kimchi is fermented cabbage. In fact, in recent years, there's been what's called fresh kimchi, in which there is no fermentation whatsoever. Also, the smell isn't necessarily the fermentation but the particular vegetable that's used (in this case, chinese cabbage). The ingredients are actually quite simple: vinegar, salt, pepper paste (the main three). These same ingredients go into other kimchi products - cucumber kimchi, radish kimchi. All have different smells due to the vegetable. I'm Korean. So, just get over it and try it. You might like it. Don't order a whole friggin bag. Go to a Korean restaurant and just try a piece. It's not meant to be eaten by itself. It's a side dish so you eat it with other dishes. |

Make a mixture of garlic, daikon radish, carrot, fish sauce in a blender. First soak your cabbage in a brine for 3 to 5 hours then rinse well. My last batch was out fermenting for 3 days and now refrigerated for 4 months and still tastes great. |
