It is a good product if you desire fat, soft udon noodles. |

Answer: | There's a lot of varieties of soba, and they don't get distinguished in English. The color and flavor definitely are of one of the high-buckwheat versions; I suspect it's ni-hachi soba, that's made with 20% wheat and 80% buckwheat flour. |

The total weight for a pack of eight bundles comes in roughly at 800g, and each bundle coming in roughly at 100g. The serving size on label is one bundle, 100g or 3.53 oz (dry). When you mentioned 2 oz servings, I thought it merited a bit of geekery on metrics. Total carbohydrates per 100g serving is 74g. 2g of this number is dietary fiber. If you want a 2 oz serving, about 42g total carbs I guess. |

After getting re-hydrated, the veggies will become crunchy. You should avoid using a microwave on the noodles being covered with water. If you do this, then the mixture will boil over in the microwave. To repeat, just stick a cup and a half of cold water in your microwave (the water contained in a large cup). Once the water is boiling, then you need to pour the boiling water over the combination of noodles plus dried veggies. After soaking for a couple of minutes, then you need to add the thick teriyaki sauce. It makes no sense to do it any other way. |

What Are Udon Noodles?
Udon noodles are white noodles made from wheat flour, water and salt. An udon noodle is typically four to six millimeters in width, making it the thickest of the Japanese noodles. (Unlike buckwheat noodles, most udon noodles do contain gluten since they’re made entirely of wheat flour.
Traditionally, udon noodles are served cold with a dipping sauce during warmer months. During colder months, they’re commonly used in soups and other hot dishes. Vegan Stir Fried Udon Noodles with Scallions
- Put on a pot of water to boil for the noodles, and cook according to package directions and set aside.
- In a large pan, add tofu and oil, and crumble the tofu with your hands or spatula.
- Cook on medium heat for 12 to 15 min, stirring frequently. During last few minutes of cooking, add the dark soy sauce, garlic powder, and onion powder.
- While tofu is cooking, whisk together the sauce ingredients.
- Once the tofu is quite browned, push the tofu to the side of the pan and add the sauce. Let it thicken somewhat.
- Add the noodles and scallions, and stir everything together.
- Top with sesame seeds.
