Answer: | I actually use 1/2 a teaspoon (about 2 grams) to make a 1/2 gallon (about 2 liters) of yogurt in one container. I add a small amount of milk, then mix in the starter thoroughly, then add the rest of the milk. Heat the milk at 112 for 12 hours. I never use yogurt from a previous batch (which carries forward and multiplies possible unwanted culture). I always use whole, organic, regular pasteurized (not super pasteurized) milk that has just been bought and just been opened (the freshest possible) to limit any unwanted bacteria that might compete. Never had a bad batch. Love this yogurt. Has a nice tart flavor (I like the stronger yogurts). |

Answer: | Yes! I use this in an instant pot with 1% milk, not ultra pasteurised. Just regular pasteurised. I use 84 ounces of milk, and a pack and a half of Euro starter. I boil, cool a little less than an hour, until the milk is between 115-120 degrees F. Then, I put in the starter and whisk for 2 min. Then, back in the instant pot for 9 1/2-10 hrs. (I like my yogurt sour. 8 hours would be fine if you like it milder. Then I stir it and strain it in the refrigerator until it gets to my preferred thickness. I doubt you would have to strain it if you used whole milk but I can’t do that for health reasons. |

That said, it will be mailed to you without refrigerated packaging and likely it goes at least 30 hours with refrigeration at that time. Apparently, it doesn't hurt or kill the culture, although I would not order this through ordinary mail during the hot summer months. |
