The casings will need to be soaked for at least 30 minutes and flushed. To use after cleaning: simply put the tube/straw over the stuffing tube and hold the casing back and pull out the straw. Answer: | If you intend to stuff sausage cases, you will need to either get your meat already ground (ground beef, ground pork, ground turkey or ground veal)to use in your recipes or you will need a grinder if you use whole cuts of meat. There are several good grinders available. Lem is a good one. Depending on the qty of meat you will be processing should determine the size, power and rate you will need. Grinders come in several sizes. Shop for best price as these can get expensive. |

Answer: | Model 606 is just the 5 lb sausage stuffer. Model 838 is the 5 lb stuffer with a kit which contains a book, casings and spices. If your just getting into making your own sausage, you may want to purchase model 883 (with the kit). Cheers, John |

Answer: | These will cure the same as natural casings, even dry hanging like salami. You just need to have the right humidity and temperature. |
