Instructions:
For Dry Ribs:
- Coat both sides of ribs evenly. Cover and marinate 4 to 8 hours in refrigerator.
- Cook in covered dish in oven at 300˚ for 3 hours. Uncover, coat top of ribs with additional rub and let cook for 1 more hour.
- For WET Ribs: During last hour coat with favorite flavor of Bone Suckin' Sauce.
- On GRILL: Same as above, but wrap in foil for first 3 hours and open foil during last hour.

Instructions
- Score back of rack in crisscross pattern, using sharp knife.
- Optional* Cover rack of lamb with honey and fresh garlic.

Bone Suckin’ Ribs Recipe
Ingredients:
- Bone Suckin’ Seasoning & Rub, 3 oz.
- Spareribs,5 lbs.,3 racks
Instructions:
For Dry Ribs:
- Coat both sides of ribs evenly. Cover and marinate 4 to 8 hours in refrigerator.
- Cook in covered dish in oven at 300˚ for 3 hours. Uncover, coat top of ribs with additional rub and let cook for 1 more hour.
- For WET Ribs: During last hour coat with favorite flavor of Bone Suckin' Sauce.
- On GRILL: Same as above, but wrap in foil for first 3 hours and open foil during last hour.

Bone Suckin’ Rack Of Lamb Recipe
Ingredients
- Bone Suckin’ Seasoning & Rub, 3 Tbsp.
- Rack of Lamb, approximately 2 lbs.
- Optional* Honey and fresh garlic
Instructions
- Score back of rack in crisscross pattern, using sharp knife.
- Optional* Cover rack of lamb with honey and fresh garlic.
- Cover rack with Bone Suckin’ Seasoning & Rub.
- Let marinate in refrigerator for 1 hour.
- Grill on indirect heat or cook in oven at 500° for 16 minutes, flipping every 4 minutes until lamb reaches 135°-140° internal temperature.

Porkosaurus began with only a handful of FedEx employees who equally enjoyed barbecue and camaraderie. After many backyard barbecues with family and friends, we decided to throw our hats into the competitive cooking ring. Our newly created team quickly learned that cooking in the back yard was vastly different from that of a competitive barbecue. Determined to master the competitive circuit, we cooked, ate, reflected, learned, and repeated.
We even analyzed our competitors by devouring all the barbecue we could get our hands-on. Through these other competitors, we learned the secrets of low and slow cooking.
What started as a local team in Memphis grew to include members from all over the country and all different backgrounds.
The company we are today is still made out of some of those original FedEx Aircraft Mechanics, but also includes a FDNY Firefighter, a Philly Policeman, an HBO Webmaster, a couple of Air Traffic Controllers and so much more. Our Company is as diverse as our flavor is unique. When Porkosaurus started as a small Competition BBQ Team over 25 years ago, we never imagined it would grow to be the award-winning BBQ Company it is today.
