Fermented items can safely travel for several days outside of refrigeration (fermentation was, after all, how veggies were preserved prior to the advent of electricity/refrigerators). We do opt to cool-package because it helps moderate temperature fluctuation in transit and can result in a better arriving-pickle. Thanks for the question! |

Answer: | Great question! Bottom line: no, there is no whey and 100% of our products are Certified Vegan (vegan.org). The "lacto" in lacto-fermented is short for lactic-acid bacteria-- they type of "good guy" bacteria naturally formed in the process of fermentation. It doesn't have anything to do with lactose or whey. There are some Eastern-European traditions that use whey as a starter culture (mainly for Beet Kvass)-- and while we're familiar with these traditions, we are 100% plant-based at Olive My Pickle. Answer: | Our vegetables are conventionally grown and we source the vast majority, which include the bulk of our product line (cucumbers and cabbage), from a family owned farm based in Georgia. They are committed to the sustainable farming practice called IPM (Integrated Pest Management) which can be read about in depth on Wikipedia. IPM basically means the farm is committed to a “manage before inputs” approach-- something IPM has in common with organic growing. Just like organic, IPM employs natural/biological means as a first option to control pests, such as the introduction of beneficial insects to take out the bad. In addition to IPM, our source is a progressive farming operation, employing the use of water conservation methods, crop rotation practices and soil regeneration techniques with the use of probiotics. Our sources do not use Glysophate. The produce is not irradiated and no GMO seed is used. |

Fermented foods are safely kept out of refrigeration for several days, well preserved from the fact that they are soaking in salt water (remember that fermentation was the safe way our ancestors preserved veggies prior to the invention of refrigerators). A result of moderate temperature fluctuation in transit is that fermentation may resume, causing pouches to puff up-- this is normal and expected during transit. Answer: | Thank you for writing. These are the ingredients:Active bacteria strains (LB. plantarum, Ln. mesenteroides, Pc. acidilactici), organic tapioca sugar. |
Question: | How many times can I reuse the brine before it no longer works? Is it like a yorgurt or sour dough starter that keeps on going, or is it time limited |
Answer: | There is not an easy answer to your question. You can reuse a brine so long as the salinity of the solution remains at a safe level and it continues to provide the desired flavor profile. The natural moisture in your product will dilute the salinity of your solution. You may start with a 3% brine, but moisture in the product will dilute this by the end of fermentation. I routinely add a small amount from a current ferment if it has a great flavor profile to sort of kickstart the fermentation in the direction that I want. But it seems to only last about 4-5 generations before it starts to drift beyond what I like and I need to start fresh. But this is also variable depending on the fermented item. Year to year crop variances with moisture and flavor and natural wild bacteria play a part. |

Answer: | I use this starter culture to ferment cooked black beans with raw onion, garlic, and jalapeno. My ratio is approximately 90% beans 10% onion, garlic, jalapeno. I don't believe the small amount of fresh vegies in this recipe is enough to make a great ferment, I believe it's the starter culture. I have made this recipe several times with this starter and all have turned out wonderfully. |

We ship all kimchi orders in a insulated bag with gel ice packs to ensure they help maintain the cold temperature during transit. Kimchi may still arrive in warm temperature, however, it will not affect quality of the kimchi since the fermented food have beneficial bacteria like lactobacillus that keeps fermented food safe to eat with very long shelf life.

Answer: | We recently redesigned the weights to fit ALL wide mouth jars (pint, quart, 1/2 gallon, etc) as of Feb. 2017. At this point, customers should have no concerns about the weights being too big to fit into their wide-mouth jars. To answer the original question: Although they use the same lids, we found that the inside mouth of most 1/2 gallon jars is slightly (very slightly) smaller because the glass is slightly thicker. Answer: | I've lost 38+ pounds in 4 months, and i'm beginning March, 2016 with great success! I planned ahead and managed carefully through Thanksgiving and Christmas. I'm now beginning the 5th month. I hope to plan carefully for March now! I want/need to lose another 40 pounds by keeping up my routine of 'being prepared' and never being without a 'shake' within reach! When I do have a 'snack attack', I think it through, and drink a shake! I like the vanilla flavor well enough to drink it at 'room temperature', and I always keep them in an insulated chest in my car to protect against an unexpected winter 'freeze'. This spring, I will likely tote a small lunch bag from the house when I go anywhere. I am physically unable to exercise other than walking when necessary, but I cut out all breads, carbohydrates, desserts, and all possible and reasonable other compromising types of foods. I always stay overly stocked up on things to 'help me' through a crisis, such as emergencies, unplanned trips, etc., to avoid having opportunities to "make excuses". I made myself a list of the 'pitfalls' as I encountered them, and put a limit on foods with 'fattening' ingredients. I substituted Premier Nutrition Protein 14 oz. shakes for one meal a day for the first 2 weeks, then I began using PNPHP 14 oz. bottled shakes it for both breakfast & dinner while eating an extremely healthy 'lunch' for another two weeks. I began with the powder, then the 11 oz. cardboard-like individual "cartons", but the smaller 11 oz. cartons just didn't quite satisfy my 'mealtime' needs and seemed to have some 'curds' forming in them, not to mention that it was harder to store the flexible 11 oz. "cartons" and safely keep them in my suitcases, car consoles, tote bags, and find a way to drink from them without needing a straw for the small opening in the cartons. However, the 14 oz. size 'bottle' just seems perfect. I particularly like the vanilla and chocolate, but I began to 'stock up' ahead of time with as many as I could use, before the expiration date. I'm busy experimenting now for another brand of ''shake'' that comes in either a bottle or a can, and try to avoid the cardboard-like 'cartons'. I'm so happy with losing approximately 10 pounds a month, that I feel energized for the future. I consulted with, and I have my doctor's approval, and my own health improvements to keep me propelled forward. I was preparing for knee surgery when I began the serious diet in November, 2015 and after the first 38+ pounds came off, I'm now walking with less and less pain, canceled the knee surgery, and I have a much brighter outlook! I now weigh less than 200 pounds, so I know it can be done!! I don't know what will happen when the 14 oz. shakes are no longer available, so if you find them, stock up on them like I'm doing. If anyone is as miserable as I was before losing the first 38+ pounds, I hope you will give these shakes a try! Finding the 14 oz. PNPHP Shakes has been a real bonus for me! |
