Answer: | Bitter almonds contain glycoside amygdalin (A.K.A. Vitamin B17). When eaten, glycoside amygdalin will turn into hydrogen cyanide. It takes about 100-200 mg of cyanide, when eaten, to kill you (about .68 mg per pound of body weight). Each raw bitter almond will produce about 4-9 mg of hydrogen cyanide. So a couple bitter almonds in a 2 lb bag is perfectly fine, however, a few handfuls of bitter almonds can cause kidney failure or even death. Hyrogen cyanide is leached out during the heating process. Due to their toxicity before being processed, in the United States it is illegal to sell bitter almonds that are unrefined. |

I have not seen anything to suggest that they have any experience or knowledge of organic farming. We have been growing organics for over 10 years. We do not even own a spray rig because the best control for pests over the years has been allowing the predator bugs to manage the other pests on their own. With respect to almonds, average organic almond orchard produces approximately half the lbs per acre as a conventional farm. This along with the 30% highest cost for fertilizers means that organic almonds are much higher priced (not including the cost of organic inspections, etc). It is also important to note that we are subject to verified annual inspections of the farm, our inputs, and our records. This is much better than a company paying an adviser to say that their product is "superior". |

Pasteurization is usually either done by high heat, which destroys some of the nutritional value of the nuts, or by toxic chemicals, which no one should want touching anything they consume. Almonds grown in the US are required to be pasteurized because of a salmonella outbreak back in the early 2000's (I think.) As far as I'm concerned, that's just paranoia and/or lobbyists' work. Salmonella outbreaks are also often linked to fresh produce (sprouts, tomatoes, cucumbers, mangoes, etc.) and those foods aren't required to be pasteurized. |

- Roast 2 cups of almonds in the oven for 10-15 minutes at 325 degrees on parchment covered baking sheet

Answer: | Pasteurization became required in California (produces 99% of all U.S. almonds and approx 90% worldwide) in 2007 following two salmonella outbreaks tied back to almonds. Pasteurization kills all mold,eggs, larvae and pretty much everything else associated with salmonella and similar. You can get non-pasteurized but then you are taking that risk, albeit a small one. The more important item is the method of pasteurization - steam, treated with PPO (propylene oxide) or irradiation. You would want to look for steam (if you would not be looking at unpasteurized). Many mfgs would tout steam and so if it is not mentioned as such - I would be suspicious and at least ask the mfg. I believe I recall seeing that an 'organic' label would mean it has to be steam pasteurized versus the other two. |

Answer: | Yes, I was curious also, so I purchased these almonds. After soaking for 24 hours, most did have little "nubs" starting to grow, so they are "enzyme activated." In theory, steam pasteurization does not (usually?) kill the seeds. All almonds sold in US stores from US farmers are pasteurized. You can only get them unpasteurized if you buy directly from the farmer (which is possible.) Strangely, imported almonds don't have to be pasteurized. You will usually find raw unpasteurized almonds originate from Spain. But you can get them from USA if you know where to go - some farmers will sell directly to the public. |

Answer: | This is not certified organic by USA "seal" standards only. These are SPANISH ALMONDS, imported from Spain. Therefore, they are NOT subject to USDA rules and regulations and also, therefore, not subject to the USDA seal as PROOF of their organic-ness (sp). But! Before you shrink away in HORROR, remember this. The fact that they are SPANISH not American almonds is a GOOD thing, because imported almonds are not subject to pasteurization. Spanish almonds do not have to be either Steam pasteurized to 200 degrees (which destroys a portion of the almonds wonderful nutrients) nor are they gassed by what is essentially poisonous fumigation as the alternation version of pasteurization that the delightful USDA requires to be perpetrated on all American almonds that are packaged and sold in the USA (the only exception being buying directly from California raw almond growers). Other then these details I have just given you, what you are left with is trust. At some point, all of us have to trust. I have bought 3 bags of these almonds, and other than the occasional bitter almond (which you just spit out, and I've only had about 5 bitter almonds per 2 lb bag on average) you have yourself an unpasteurized almond, with nutrients retained. That is worth the small risk I take when I trust that Spanish almonds really ARE organic. One more suggestion I would make, and that is to SOAK the almonds. Their is phytic acid (a natural protection of the plant, not a human induced chemical) that, if you remove by soaking, will give you enriched, enlivened and activated vitamins that are not able to be accessed by the body without soaking. If you want to know more about "soaking", how to do it, why it's important, you can find numerous articles, blogs and websites on the matter on Google. I always soak and dehydrate (dry) all my Spanish almonds for best nutrition. I find them to be so much more tasty than any American pasteurized almond.
