Answer: I have tried converting my family roll recipe with just substituting Namaste instead of bread flour and was not successful. I think you should try their recipe because they probably add more and/or less of different things. Other than bread, Namaste is the best gluten free flour I've used when converting regular recipes over to gluten free. Question: Does it contain tapioca
Answer: Tapioca is from the same plant, but is only the extracted starch of the cassava (yuca) root. Otto's cassava flour, on the other hand, is a whole food. It is the entire cassava (yuca) root, minus the peel. No fiber is removed. And no chemicals are used in our process. It is 100% cassava. Hope that helps clarify things.
Question: Do I have to boil this in order to use it or add boiling water to it or can I just add it like regular flour? Thank you
Answer: You can just use it like regular flour. We have pre-cooked it for you so it is all ready to use.
Question: why is this brand twice as expensive over the other brand here on amazon when they are both non-gmo
Answer: This particular brand harvests their yuca at a very young stage so that the fiber/starch ratio mimics that of wheat very closely. Waiting longer to harvest produces larger yuca, and therefore more flour for your money, but you won't necessarily have consistent results in your final product. The process of drying the yuca also plays a huge roll in the final cost. Many Cassava Flours are sun dried for days, which is definitely cost effective, but leaves opportunity for mold growth. Otto's on the other hand is baked within hours of harvest in order to eliminate that risk of mold.

Question: What is the difference between this and Bob's red-label baking flour
Answer: The red label flour has garbanzo bean flour in it. I could not handle that way my end products came out with the red label flour. That garbanzo bean flavor just overpowered almost everything I baked especially any sweet baked goods, just bitter as. Will only get the blue label one from now on.... plus the blue label has xanthan gum.
Question: Can you make this in a bread machine
Answer: We asked Bob's Red Mill and their response was, "Our 1 to 1 Baking Flour is best used in pastries like muffins, quick breads, and cookies. It has a low protein content and does not work well as a bread flour. You can use it to make Pizza Dough though."

Answer: For baked goods like cookies ,brownies ,etc it works well. I have even made zucchini bread with it. Does not work well with regular bread though. The best gluten free flour out there.
