Answer: The red label flour has garbanzo bean flour in it. I could not handle that way my end products came out with the red label flour. That garbanzo bean flavor just overpowered almost everything I baked especially any sweet baked goods, just bitter as. Will only get the blue label one from now on.... plus the blue label has xanthan gum.

Answer: The newer version is gum, rice and corn free... The pink box contains those three items.

Answer: Better batter All purpose Flour, NOT Beta version: rice flour, brown rice flour, tapioca starch, potato starch, xanthum gum, pectin (lemon derived). Use one for one.
Question: Do you have to use the yeast packet
Answer: The "beta version" is the new, improved version of Better Batter GF Flour. It is gum, rice and corn free-- the previous versions were terrific, but did have gun, rice and a potential to have some cross contamination with corn. I've used the new version and love it. My family has a serious sensitivity to corn so this is a huge reason for me to buy it. Hope this helps to answer your question.

Question: Why doesn't this product sheet include the ingredients? I just found out after buying it that it contains milk powder, which I can't eat either

Answer: If you are asking if you must use the one provided...then no. But yes to yeast, given that this is a mix for a yeast-based dough. If you must be yeast free, I'd think you'd need to do some research on pizza crusts made with other options to leven it, and I'd suggest making sure that you have egg in that incarnation, given that you need some stretch and lift. The pizza crust would be very different without the yeast. (I wrote the below comments about how to use this more like a traditional pizza crust--with good success too.) Breads leavened without yeast have a different crumb--think cake or quick bread--not pizza dough.
