Answer: The red label flour has garbanzo bean flour in it. I could not handle that way my end products came out with the red label flour. That garbanzo bean flavor just overpowered almost everything I baked especially any sweet baked goods, just bitter as. Will only get the blue label one from now on.... plus the blue label has xanthan gum.

Answer: We asked Bob's Red Mill and their response was, "Our 1 to 1 Baking Flour is best used in pastries like muffins, quick breads, and cookies. It has a low protein content and does not work well as a bread flour. You can use it to make Pizza Dough though."

I also use 3/4 cup of Bob's with 1/4 cup almond flour from Costco or similar, 1/2-1 tsp of cinnamon per cup of flour and about 1/2 to 3/4 teaspoon of Xanthan gum. With this ratio Bob's makes most excellent and delicious muffins, waffles and pancakes. I think the cinnamon counteracts the bitterness of the bean flour. I find the cinnamon flavor is pretty much lost.

I also use 3/4 cup of Bob's with 1/4 cup almond flour from Costco or similar, 1/2-1 tsp of cinnamon per cup of flour and about 1/2 to 3/4 teaspoon of Xanthan gum. With this ratio Bob's makes most excellent and delicious muffins, waffles and pancakes. I think the cinnamon counteracts the bitterness of the bean flour. I find the cinnamon flavor is pretty much lost.

¾ cup sugar; ¾ cup packed brown sugar

1 teaspoon baking soda

1 teaspoon salt

1 ½ cups chocolate chips

1 cup (2 sticks) butter, softened

1 teaspoon vanilla extract

Preheat oven to 350°F.

Stir together Krusteaz Gluten Free All Purpose Flour with remaining dry ingredients. Add eggs, butter and vanilla. Blend until a dough forms, kneading by hand if necessary. Scoop dough by rounded 2 tablespoons and place 2-inches apart on ungreased cookie sheet. Flatten slightly. Bake 10-11 minutes or until light golden brown on the edges. Cool 5 minutes before removing from pan.

Preheat oven to 350°F.

In medium bowl, place Krusteaz Gluten Free All Purpose Flour, baking powder and salt; stir until well blended. Heat milk until warm; add yeast and sugar. Add milk mixture; olive oil and vinegar to flour mixture, stir until ball forms. With slightly damp fingers, press dough in thin even layer onto lightly oiled 12- to 15- inch pizza pan.

Bake 22-24 minutes. Crust will have cracks. Lightly brush with olive oil and immediately top with sauce, desired topping and cheese. Bake for an additional 15-20 minutes or until toppings are warmed and bubbly. Serve hot.

Answer: You can store the gf flour as you would a wheat flour - in a container at room temperature - providing you will use the flour within a couple months. If you will not use the remainder of the flour during that time period, you can increase the longevity of the flour by storing in the freezer. You only get about 5 cups per box, so if you bake at all regularly, you probably won't need to keep it in the freezer.
