Answer: In Italy, the only balsamic that can state age is a DOP product. These run at a minimum of 12 years and require the approval of the Consortium there. In keeping with these rules, we are not able to state the specific number of years aged. I can, however, give you some extra info on the pre-bottling aging process. This balsamic is a Balsamic Vinegar of Modena - balsamic that is aged in wooden casks. This balsamic has been aged in Oak barrels with the minimum eighty percent concentrated grape must and aged red wine vinegar. With this high quantity of grape must, you'll find a balsamic that is wonderfully sweet (no added sugars) and with a great thickness. This 16 fl oz balsamic is a great mix of quantity and quality such that you have a deep viscosity that will work well for a salad and cling right on to meats, cheeses, bread and more. If you are in the hunt for a DOP certified balsamic, look for a 3.4 oz bottle with the specific certification from the Italian consortium. Traditional balsamic from Modena is only sold in a bulb-shaped 100ml bottle. Traditional balsamic vinegar begins with grape must —whole pressed grapes complete with juice, skin, seeds and stems. The must from sweet white locally grown and late-harvested grapes —usually Lambrusco or Trebbiano varieties— is cooked over a direct flame until concentrated by roughly half, then left to ferment naturally for up to three weeks, and then matured and further concentrated for a minimum of 12 years in a "batteria," or five or more successively smaller aging barrels. These barrels are made of different types of wood such as oak, chestnut, cherry, juniper, and mulberry, so that the vinegar can take on the complex flavors of the casks. Answer: Won't speak to the label (that subject is too complex) but in terms of bottle shape, Traditional Balsamic is sold in wax-sealed bottles with unique identifying numbers. Traditional balsamic from Modena is only sold in a bulb-shaped 100ml bottle. If it's from Reggio Emilia it's only sold in a 100ml bottle shaped like an inverted tulip. If it's from anywhere else, it's not traditional balsamic vinegar. (But that wouldn't prevent counterfeiters from bottling fake balsamic in either of those two shapes).

I can honestly say all of my reviews are 100% authentic. As for the other brand you mentioned, he is purchasing the product from the consortium, whom gets it from many other producers. Which he states ,however from a business point of view why would a producer sell their "BEST & HIGHEST QUALITY" product for someone else to sell. That's like Mondovi wines taking their best vintage and selling it to someone and keeping their second best vintage to be sold as Mondovi. This doesn't make sense to me, as it doesn't make sense for a producer of Aceto not to use their Best for their label. Also what about consistency, you may get a bottle that taste good and then the next time buy it again and it could be a different producer and have a different taste. With the Rossi Barattini brand, as I mentioned its his farm, his grapes, he oversees all processes and bottling and he only bottles the highest quality from his harvest. I have found a cheaper brand that isn't 25 years old, but has similar depth I call it "The Tubac" www.tubacoliveoil.com , 520-398-3366 ask for Rose, this is a wholesale company with high quality products "Traditional Style Dark" balsamic vinegar, I found this to be an acceptable alternative to 25 year old balsamic...I use a lot of it and enjoy it, and it's about $20 for a 12oz.bottle. They have other high quality vinegar and oil products available as well.
