A highly crafted product, traditional balsamic vinegar is produced in small batches. It is sweet, tart, dark, syrupy, and expensive. You will only find this seriously pricy vinegar in a specialty store or online, generally ranging in price from $50 to $200. Modern commercial balsamic vinegars (what you will likely find at your local grocery store) combine concentrated grape must with wine vinegar to speed up the acidification process. This vinegar is typically aged from 2 months to 3 years in large oak barrels. The percentage of wine, determines the thickness of the final product. We mix about 20% grape must to 80% fresh wine. Then we add our 41-year old starter and age for 8 years in wood. Next year we are planning to introduce our balsamic glaze. This will be definitely thicker. Please note that our vinegar it is not made from concentrate therefore it will not taste like sugar. Instead, it is made with fresh must, fresh wine aged 8 years in wood. Once you put a drop in your mouth, the difference will become very evident. |

Grapes are among them.) But there is no "added man made sulfites" here (which I think is your concern and what some people are allergic to). Grape musts are the parts of the grape that are used to make wine from grapes (musts means: skin, flesh, seeds of the grape). M G Pappas is a very good, aged balsamic vinegar without any additives (unless you count wine vinegar as such), and less acid than less quality ones. Modena, Italy is a place where some of the best balsamic vinegars come from. |

Answer: | It is sweet and syrupy. Technically it is a reduction but not like cooking down wine vinegar in a pan. The reduction occurs as the vinegar agesin wooden barrels over time the barrels used are smaller. I have purchased three bottles each came with a batch number. I researched and found this to be the highest grade at a reasonable price. I will definitely buy another. You will not need to cook this down to get the sweet thickness of a reduction. |
