What is Extra Virgin?

Question: What is the harvest year
Answer: Don't know about the fridge, but I have kept mine in large glass jars for months on my counter. I drain off the brine and make up another solution using organic EVOO, hot, whole, small peppers (for a little kick), and the olives marinate, the longer the better. I'll give some away in small jars as hostess gifts, serve as hoerderves, snack on them, whatever. For me, the olives hold up well and stay firm. That large can filled up a gallon size Ball jar and a 1/2 gal one at the same time. It makes quite an impressive display while marinating. I've kept them out on the counter for about 3 1/2 months. Delicious! Have not just opened them and placed in the fridge.

Answer: Jo, it's 101 oz, 3 liters (not oz as in the description). The company should correct that because observant people like you may not buy when they see that.
Question: How can I tell if it's authentic
Answer: When you buy a tin of olive oil you need to make a hole with a nail at the other opposite end of the opening of the spigot. This helps the breathing of the can when pouring in to an olive oil canister. make sure to cover the nail hole with the same nail as to not permit any critters to fall in. Your problems will be solved.

Answer: There are two dates on it. One is the “use before” date and the other date is May of 2019. However I’m not sure if that is the harvest date or the bottling date. I hope that helps

In Europe there are very strict rules regarding food productions, and the EVO's from Roi are made under the Certification of DOP (Protected denomination of origin) which has an extended set of rules available online, to ensure quality to consumers.

Answer: This olive oil is too delicate for pesto. Taggiasca olive oil is naturally very low in polyphenols (antioxidants) and has, therefore, a short shelf life. Taggiasca olive oil is lovely when well-milled but best consumed fresh in Italy six months from harvest. Taggiasca olive oil is likely to be damaged during the long journey from Italy to your table via e-commerce. I would opt for stronger medium-intensity olive oil for your pesto.
