Answer: An earthquake hit modena in 2012, destroying many warehouses used to store and age food products like Parmagiano, which got all the media attention. I suspect the balsamic warehouses were desired as well, meaning they started aging balsamic again after that, so this would likely be less than 6-7 years, unless it was bottled before the quake and just old stock, but i think all that stuff has been sold by now.

Answer: Pull off the wood/cork stopper(like a wine bottle) then push in the cork stopper with the glass tube in side(it too has a cork stopper that covers the glass tube) the glass tube has a little pour spout moulded on one side. Simple but works great ! The balsamic vinegar is the tastiest for the price. I have seen it used as part of the condiments on the table in restaurants in Italy (Way back in the day when you could travel).

Question: What are the ingredients
Answer: Cooked grape must and wine vinegar. It has a sweet taste but no sugar is added; the grapes themselves are the sweetness, I think. You will love this balsamic vinegar and will want to keep it on the table to use on many things. I have found that if I keep it in a dark place, away from the heat, I forget about it, so it stays on my marble pastry slab to keep it cool in our southern climate.

Answer: I do not refrigerate mine. I have had several bottles, and have never refrigerated them. It is the best Balsamic!
Question: can anybody compare this to other 18 year aged balsamics? A lot of the young stuff is barely dense
Answer: This is not aged18 years, but is good. You'll have to try a few pricer brands or go to a DOP to get much better, althugh tastes vary of course. Botte Piccola is similar but less tangy, Mussini Reserva di Famiglia is a step up to 14 years ages but is only 100 ml, not 250. Mia Bella is not in the same class, it's more food-grade. Hope this helps.
Question: Why do i not see the mandatory accredidation "aceto balsamico tradizionale di modena" printed on the label if it is the real thing
Answer: Perhaps you are referring to the DOP accreditation (Denominazione di Origine Protetta) rather than the words in your question. DOP certified balsamic vinegar production is subject to oversight be the DOP consortium. The balsamic can only contain grape must and nothing else - no wine vinegar, no sugar, no caramel coloring ... nothing. It has to be aged for a minimum of 12 years, and comes in a specifically shaped bottle which the produce has to buy from the consortium. It will also cost you 2-3x more than this depending on the source. I have a couple of bottles of the DOP and it is truly amazing balsamic, but at about $100 for a small 3.5 ounce bottle I use it sparingly and probably wouldn't put it on a salad. I've not tried this particular balsamic, but from the reviews, it looks like a good balsamic for salads and many other uses.

Answer: Not sure if by "thicker" you mean syrupy like a balsamic reduction, but it isn't that. It is thicker than a red wine vinegar and "has legs", as in you can see it take some time to run down the inside of the bottle. I think it is one of the best balsamic out there. Hope that helps!

Question: How long has this product been aged before bottling
Answer: In Italy, the only balsamic that can state age is a DOP product. These run at a minimum of 12 years and require the approval of the Consortium there. In keeping with these rules, we are not able to state the specific number of years aged. I can, however, give you some extra info on the pre-bottling aging process. This balsamic is a Balsamic Vinegar of Modena - balsamic that is aged in wooden casks. This balsamic has been aged in Oak barrels with the minimum eighty percent concentrated grape must and aged red wine vinegar. With this high quantity of grape must, you'll find a balsamic that is wonderfully sweet (no added sugars) and with a great thickness. This 16 fl oz balsamic is a great mix of quantity and quality such that you have a deep viscosity that will work well for a salad and cling right on to meats, cheeses, bread and more. If you are in the hunt for a DOP certified balsamic, look for a 3.4 oz bottle with the specific certification from the Italian consortium. This is the one size they'll come in and typically range around $150-250 per 3.4 oz bottle. If you're thinking of a balsamic for every day and weekly use, we'd be happy if you gave our product a go. Answer: No. There is no alcohol in Blazing Bella Balsamic (Barrel aged traditional, 250mg). I have many of their balsamic vinegars and they are all delicious. I wouldn't even consider purchasing another brand of balsamic vinegar. Blazing Bella is the best!!! None of their balsamic vinegars have any alcohol.

Answer: From 2009, in Italy is changed system of rating for balsamic vinegar. There use to be different systems and most popular was stars and leaf. Now there is no more system and all is based on tasting, same like olive oil. Who is using these systems, are trying to hide something as per Italian law, they are applicable any more.

Answer: No, there are NOT added sulfites, they are natural sulfites from grapes.
