Answer: | The bottles labled Destination Series, and harvested in the 2017-2018 harvest season are not from 100% California grown olives. The label on the basic bottle you can find in stores now says Destination Series and says the olives are sourced from growers in California, Argentina, Chile, and Portugal, then refined and bottled in California. It does NOT have the California Olive Oil Council seal. It does have a seal in place of that saying it is certified Extra Virgin Olive Oil. I have an older bottle on hand from the 2015 harvest. The label says it uses 100% California grown olives and it has the California Olive Oil Council seal. This is the one Cooks Illustrated recommended where they explained olive sourcing and why it is better to buy from companies that bottle close to and soon after harvest. Many loyal customers, as you can see in the reviews, are upset about this, thinking California Olive Ranch betrayed them. They have been buying for a while and probably didn't look closely at the label. I can't blame them for feeling baited and switched. If this disappoints you, as it did me, wait for the next harvest before dismissing California Olive Ranch entirely. I have no affiliation or insider knowledge but I believe this is only a temporary change due to a bad harvest. In fact, the company's CEO is on record in the NY Times as saying the 2018 California olive harvest was a disaster for growers due to the unseasonably cold winter (elsewhere, it was reported it sent CA olive oil manufactures scrambling to find olives to stay afloat and meet demand) and that they had established partnerships with other countries a few years ago in case of this very situation. He also said at least 26% of the oil in each Destination Series bottle is from California. It was also in the news late last year that California Olive Ranch is expanding their plantings by 2000 acres, which should help mitigate less productive years. |

Couscous Salad with Walnuts and Dates
Ingredients:
1 box Mediterranean-style couscous.
½ cup Filippo Berio Extra Virgin Olive Oil.
¼ cup lemon juice.
½ tsp lemon zest.
1 tsp lime zest.
1 cup canned chickpeas, drained.
⅔ cup pitted dates, diced.
¼ cup crumbled feta cheese.
½ tsp minced chives.
1 fresh mint sprig, minced.
1 plum tomato, seeded and diced.
½ cup chopped walnuts.
Directions:
Prepare couscous according to package directions. Set aside.
Whisk together extra virgin olive oil, lemon juice, lemon and lime zest until combined. Add chickpeas, dates, feta cheese, chives and mint; mix well. Stir in tomato and walnuts. Set aside.
Fluff couscous with a fork until grains are separated; transfer to large serving bowl. Pour extra virgin olive oil mixture over couscous, mixing well.

Ingredients:
Grilled Chicken and Mango Salad-
2 tbsp Filippo Berio Extra Virgin Olive Oil.
2 tbsp lime juice.
½ tsp salt.
¼ tsp freshly ground pepper.
1 lb boneless skinless chicken breasts.
1 head Boston Bibb lettuce, leaves divided.
1 Ataulfo mango, peeled and cut into matchsticks.
1 can (14 oz) hearts of palm, sliced diagonally.
½ cup halved red grapes.
¼ red onion, sliced.
2 tbsp fresh cilantro leaves.
⅓ cup toasted pecan halves.
Cilantro-Lime Dressing:
¼ cup Filippo Berio Extra Virgin Olive Oil.
¼ cup lime juice.
1 tbsp Dijon mustard.
1 tbsp honey.
1 tsp finely grated lime zest.
½ tsp ground cumin.
1 tbsp chopped fresh cilantro.
Directions:
Cilantro-Lime Dressing:
Whisk together extra virgin olive oil, lime, mustard, honey, lime zest and cumin until blended. Stir in cilantro.
Grilled Chicken & Mango Salad:
Stir together extra virgin olive oil, lime juice, salt and pepper; toss with chicken and let stand for 10 minutes. Preheat grill to medium-high heat; grease grate well.
Grill chicken for 5 to 7 minutes per side or until grill-marked and cooked through. Let rest for 5 minutes; thinly slice chicken diagonally.
Arrange lettuce leaves on 4 plates. Arrange chicken, mango, hearts of palm, grapes, onion, cilantro and pecans on top; drizzle with Cilantro-Lime Dressing.

Cast-Iron Skillet Pizza
Ingredients:
1 lb store-bought pizza dough, at room temperature.
1 ripe tomato, thinly sliced.
¼ lb fresh mozzarella cheese, diced.
Coarse sea salt.
2 tbsp Filippo Berio Extra Virgin Olive Oil.
½ cup shredded fresh basil.
Directions:
Heat well-oiled cast-iron or nonstick 10- or 12-inch frying pan over medium heat for 5 minutes.
Divide dough in half; roll one half into round 1 inch smaller than diameter of pan. Cook dough in hot pan until dough begins to rise and bottom starts to brown. Using metal spatula, turn carefully. Layer half of the tomato slices over dough; scatter half of the mozzarella over top. Lower heat to medium-low; cook until mozzarella melts.
Using metal spatula, transfer pizza to cutting board. Sprinkle with salt; drizzle with half of the extra virgin olive oil. Cut into wedges; sprinkle half of the basil over top. Repeat with remaining ingredients.

Produced by the Asaro Brothers Company in Partanna, Sicily, this oil is a first cold-pressed, Extra Virgin Olive Oil, but it is also an early harvest (October), single-olive varietal (Nocellara del Belice), unfiltered oil. When the tins are first opened, the oil is cloudy with a green hue, herbaceous aroma and 'pizzicante' flavor. (Pizzicante is an Italian phrase that describes the strong flavor that grips the back of your throat and is characteristic of most Tuscan olive oils.) As the oil ages it will mellow slightly and become clearer as the sediment drops to the bottom of the tin. The colorful packaging is beautiful enough to leave on your countertop and makes a terrific gift!

Answer: | Don't know about the fridge, but I have kept mine in large glass jars for months on my counter. I drain off the brine and make up another solution using organic EVOO, hot, whole, small peppers (for a little kick), and the olives marinate, the longer the better. I'll give some away in small jars as hostess gifts, serve as hoerderves, snack on them, whatever. For me, the olives hold up well and stay firm. That large can filled up a gallon size Ball jar and a 1/2 gal one at the same time. It makes quite an impressive display while marinating. I've kept them out on the counter for about 3 1/2 months. Delicious! Have not just opened them and placed in the fridge. |

Answer: | When you buy a tin of olive oil you need to make a hole with a nail at the other opposite end of the opening of the spigot. This helps the breathing of the can when pouring in to an olive oil canister. make sure to cover the nail hole with the same nail as to not permit any critters to fall in. Your problems will be solved. |

Answer: | You could use Extra Virgin in the production of soap and lotion; however, as I've read the cold press character of evoo will give soap a greenish color that some may find undesirable. Some suggest using plain olive oil of grade 40% less. But if a greenish hue isn't an issue with you, the grade of olive oil you choose is really immaterial. So, yes, you could use this. |

What is Extra Virgin?
'Extra' is the highest grade for olive oil. Virgin oil may be called 'extra' if it has less than 0.8% free oleic acid, and if it exhibits superior taste and aroma. Thus, the 'extra' in extra virgin olive oil means 'premium' or simply, 'the best.'
Why Olive Oil?
Extra virgin olive oils are not processed or refined. Extra virgin olive oil is essentially 'fresh squeezed' from the fruit of the olive tree, without alteration of the color, taste, and nutrients or vitamins. Because of the integrity of the product, and its antioxidant components, extra virgin olive oil will keep longer than all other vegetable oils.
