When the tins are first opened, the oil is cloudy with a green hue, herbaceous aroma and 'pizzicante' flavor. (Pizzicante is an Italian phrase that describes the strong flavor that grips the back of your throat and is characteristic of most Tuscan olive oils.) As the oil ages it will mellow slightly and become clearer as the sediment drops to the bottom of the tin. Answer: | Don't know about the fridge, but I have kept mine in large glass jars for months on my counter. I drain off the brine and make up another solution using organic EVOO, hot, whole, small peppers (for a little kick), and the olives marinate, the longer the better. I'll give some away in small jars as hostess gifts, serve as hoerderves, snack on them, whatever. For me, the olives hold up well and stay firm. That large can filled up a gallon size Ball jar and a 1/2 gal one at the same time. It makes quite an impressive display while marinating. I've kept them out on the counter for about 3 1/2 months. Delicious! Have not just opened them and placed in the fridge. |

This helps the breathing of the can when pouring in to an olive oil canister. make sure to cover the nail hole with the same nail as to not permit any critters to fall in. Your problems will be solved. |

'Extra' is the highest grade for olive oil. Virgin oil may be called 'extra' if it has less than 0.8% free oleic acid, and if it exhibits superior taste and aroma. Thus, the 'extra' in extra virgin olive oil means 'premium' or simply, 'the best'.
Why Olive Oil?
Extra virgin olive oils are not processed or refined. Extra virgin olive oil is essentially 'fresh squeezed' from the fruit of the olive tree, without alteration of the color, taste, and nutrients or vitamins. Because of the integrity of the product, and its antioxidant components, extra virgin olive oil will keep longer than all other vegetable oils.

Olive Oil Certification Programs
North American Olive Oil Association (NAOOA).
Only organization collecting samples off the shelf at the point of retail sale, which is especially important in measuring quality, which can change over time or with handling.
Only organization performing the full International Olive Council (IOC) tests for authenticity (i.e., purity).
Participants cannot choose the samples or where they come from.
Use highly experienced IOC testing facilities, most frequently in Italy or Spain, two of the largest olive oil producing and consuming nations in the world.
Grades of Olive Oil
Extra Virgin Olive Oil
The highest grade and most versatile due to the range of flavor profiles available. Virgin oil must be unrefined, have less than 0.8% free oleic acid and exhibit superior taste and aroma.
Virgin Olive Oil
Virgin olive oil is also unrefined but has a higher level of oleic acid and less bold flavor than extra virgin olive oil.
Olive Oil
Olive oil is a blend of virgin and refine. Heat and chemicals are used in the process of extracting oil and removing flaws. Olive oil contains less than 1% of oleic acid and is a household all-purpose cooking oil.
Olive Pomace Oil
Olive pomace oil is a lesser quality. It is a blend of refined pomace oil and virgin olive oil. Its mild taste is the result of a refining process using chemicals.
Refined Oil
Refined olive oil is made from refining virgin olive oils that have a high acidity level to eliminate defects. It is generally tasteless, colorless, and has no odor.
