Answer: | Some olive oil producers "winterize" their oils so that it doesn't become inconveniently solid on cellar shelves during the winter. They chill the oil and filter out the wax that solidifies or clumps up. In this way, they can ensure that their oil is always pourable. Because this 100% oil does not solidify when chilled does not mean that it has been cut with inferior oils or that it is not the real thing. It just means that they used the "winterize" process so as to keep the oil fluid when cold. Different solutes within the oil solidify at different temperatures which enables the producer to separate out the solutes that become solid when chilled which leaves the solutes that do not solidify to allow for easy pouring. The Fattoria Bini is located nearby Empoli, in the Chianti area, between Florence and Pisa in the heart of Tuscany, a natural and historical environment. It has been passed from generation to generation, and today it is led by Elena and Francesca Bini Moriani, who continue, year after year, in their meticulous work of restoration and modernization. The historical site of the farm, today family residence, is the Villa Terraio, a five hundred years old villa, with a beautiful Italian style garden. The Villa, located in the Florentine hills, is surrounded by the vineyards and olive groves of the Fattoria Bini and accompanied by Borgo San Giusto, hospitality venue also ideal for meetings, shows, and private receptions. In the mid-nineties, the Bini Family started a significant reforestation intervention. Today it is possible to see deer wandering in the woods. The origins and history of the Fattoria Bini are connected to the history of the Grand Dukedom of Tuscany. In the historical period from Pietro Leopoldo to Leopoldo II of Lorraine, 1765-1790, the Bini Family, originally from Livorno, began to focus on agriculture. Answer: | This product has not been filtered. Therefore, chances are you can see a slight sediment or cloudiness at the bottom of the bottle. Filtering extends the shelf life of olive oil, but may decrease the heart-healthy poly-phenols and aroma profile of the oil. As an artisan producer we produce smaller batches of olive oils and able to sell them quickly. Instead of filtering, we settle down olive oil naturally in a stainless-steel tank for at least 1 month which is called racking. This process allows the small particles like olive pits or flesh to settle down at the bottom of the tank, which we never bottle. This process allow us to preserve all the polyphenols and full flavor or our artisan olive oils. |
