User questions & answers

Question: Is there a seal stating the product is: "certified extra virgin by the california olive oil council (cooc)" I don't see it on their website or OCCO
Answer: Abosolutely! This device is specially for chisel. And CartLife Honing Guide comes with a clear Manual English Instruction.
Question: Does the 3L bag continue to keep out oxygen after it's been opened? How is it different from a bottle? Wondering how long it will stay fresh
Answer: It depends on what you are sharpening. If you are unsure of the angle that your edge profile should be, I suggest googling the brand of manufacturer of whatever blade you are trying to sharpen. The sharpening jig has instructions on how to set the angle of attack based on the projection of the blade. The farther out the blade, the less on an angle.
Question: What is the dimension of the box? Pantry shelf limitations possibly
Answer: Judging from the atrocious spelling in the description, probably somewhere that doesn't pay much attention to detail or quality.
Question: By ordering now, would this be 2017 harvest date
Answer: You can use the measurements on the included chart .For example , a 25 degree angle on the plane blade has a projection of 50 MM. I do the measurement projection then put the plane on a flat surface (in the Cartlife Honing Jig) then check it with my Igaging magnetic digital angle gauge. If you look on UTube there should be a video on this, as well as building a jig so you do not have to measure each time. I built the jig for both plane blades and chisels because they are different. Hope this helps

Fresh Flavor Has Always Been A Passion

The Cortopassi family came to California from the Old Country in search of a better life. We had little in the way of material possessions but brought a family tradition of real food based on farm-fresh flavors of "la vera cucina".

As Nonna Teresa Cortopassi taught us, "The key to good food is starting with the freshest, best ingredients and cooking them in your own way." Nonna's way is how we still cook today!

FAMILY FARMING - REAL OLIVE OIL

Fall Harvest Tradition

Many of our family's favorite foods rely on fresh and flavorful olive oil. In Nonna's time, Italian olive oil came from olives hand-picked in the Fall. It was full of fresh flavor and met our family's passion for good food.

However, times changed and, for lack of labor, the olive harvest in Europe evolved from hand-picking in the Fall to mechanical "tree-shaking" in the Winter. The result was oil which no longer tasted fresh.

Because we have always been farmers, we found a new way to grow and pick olives in the Fall, which makes fresh and flavorful oil that Nonna Teresa would embrace!

It tastes so fresh and so good that we established the Corto Olive Company!

FALL HARVESTING: The Grove

Our olives are harvested at peak freshness when they are green with a hint of violet.

COLD-EXTRACTION: The Mill

Cold-extracted within hours of being harvested straight off the tree.

CLIMATE-CONTROLLED: The Cellar

Our climate controlled cellar keeps our oils perfectly fresh until they are ready to be packaged.

OXYGEN-FREE, LIGHT-FREE: The Packaging

Our Oxygen-Free FlavorLock Box system keeps light and air out, but all the freshness in.

User questions & answers

Question: What is the polyphenol percentage
Answer: Yes, it is COOC certified, but the certification is not shown on the box. Check the COOC website where they list all certified olive oils.
Question: Is this corto's "truly" evoo? the title doesn't say truly, but the picture of the label does so just trying to confirm. thanks
Answer: Yes, it continues to keep out oxygen after it's been opened. Different from bottle: spout on bottom of bag/box, gravity assist release of olive oil, no air contact. Bottle is convenient for easy pick up and pour right over your pan vs lifting heavy box to dispense over pan. I use a funnel to dispense the olive oil from the box, into a smaller bottle for easy use. That allows me to always have fresh olive oil on hand while is stored in the bag/ box. I purchase the box bc I use a lot of olive oil.
Question: Is this for salads or can you saute with this oil
Answer: Approx. 10.5" high 6" deep and 4" wide
Question: What is the calorie count on this oil
Answer: I just (November 2018) got one from seller Sweettamazzee and its harvest date is September 2017. Marked best by date is 2020. I agree with everyone else that it tastes great — fruity, clean, and not too peppery.

User questions & answers

Question: What is the harvest date, bottling date, and 'exp/best by' date of stock currently shipping
Answer: They don’t show specific percentage levels but they harvest the olives in the fall, when the polyphenol levels are highest
Question: HiYa❣️ What is the Harvest “date” & is it blended with other oils
Answer: The bottle I ordered about a month ago does say the word “truly” on it
Question: For those that have purchased it: is thr cooc seal on the back of this bottle
Answer: Wonderful for dipping or salads and we used for sauteing as well until I read recently that EVOO shouldn't be used with heat, to use plain Olive Oil for that application. Delicious tasting olive oil; we had it at an Italian restaurant to dip bread in and had to ask the brand and order some.
Question: Is it bottled in glass or plastic
Answer: The calorie count for this Corte. Olive oil is 120.

User questions & answers

Question: How long does it last unopened
Answer: Whoa! Reasonable questions, but we haven't bought wonderful Corto in a while, so I don't have a bottle to consult. It remains a huge favorite however, doubt you could go wrong trying one bottle. Good luck!.
Question: Where are the ingredients listed, not on the bottle
Answer: Harvest date is 2018, it uses Arbequina, Arbosana and Koroneiki Olives. It is milled in the Lodi wine region of California. They cold press it within hours of harvest. The bottle doesn't specify if it is blended with other oils, however I'm guessing not as it is a fresh mild tasting oil, that is what I most like about it. I have ordered two bottles at a time now for 3-4 years twice a year.
Question: Does this truffle oil contain real truffles or is it a flavoring that tastes like truffles
Answer: I don't see a cooc seal in the back of the bottle, but this is so far the best extra virgin olive oil I've ever had (and I come from Italy).
Question: How many ounces are in the bottle
Answer: The bottle is glass.

Fattoria Bini - Farm View

The Fattoria Bini is located nearby Empoli, in the Chianti area, between Florence and Pisa in the heart of Tuscany, a natural and historical environment. It has been passed from generation to generation, and today it is led by Elena and Francesca Bini Moriani, who continue, year after year, in their meticulous work of restoration and modernization. The historical site of the farm, today family residence, is the Villa Terraio, a five hundred years old villa, with a beautiful Italian style garden. The Villa, located in the Florentine hills, is surrounded by the vineyards and olive groves of the Fattoria Bini and accompanied by Borgo San Giusto, hospitality venue also ideal for meetings, shows, and private receptions. The Villa Terraio is surrounded by a beautiful forest, consisting mainly of tall oak trees, where you can often see rare birds of prey flying undisturbed.

In the mid-nineties, the Bini Family started a significant reforestation intervention. Since then, more than 15,000 trees (including walnuts, oaks, ash trees and cypresses) have been planted over 50 hectares, allowing the regeneration of the original rural environment. Today it is possible to see deer wandering in the woods. The origins and history of the Fattoria Bini are connected to the history of the Grand Dukedom of Tuscany. In the historical period from Pietro Leopoldo to Leopoldo II of Lorraine, 1765-1790, the Bini Family, originally from Livorno, began to focus on agriculture. Mariano, a wine merchant, moved to Empoli in 1789 to buy a small farm and adopt the latest cultivation techniques from Cosimo Ridolfi. The purchase of the Villa Terraio and surrounding farms date back to 1880. The Villa was the residence of the historic Florentine family De’Cerchi in the early sixteenth century.

Fattoria Bini - The Olive Orchards

Today, the olive orchards consist of 7,500 olive trees which extend over 25 hectares at an altitude between 100m and 200m above sea level. The olive varieties include some of the best known and more performing Tuscan cultivars: Frantoio, Moraiolo, Leccino, and Pendolino.

Only the Best Olives

At the Fattoria Bini all olives are picked by hand or with the help of hand-held olive shakers by groups of hard-working olive pickers. Entimio Distinto is crafted from only the best olives hand-picked early in the season. This unique olive oil is cold extracted within hours from harvest, in low-oxidation local mills to obtain a nutraceutical EVOO rich in antioxidants and health properties.

User questions & answers

Question: Is the listed 13 grams per tablespoon of saturated fat content, which would surely offset heart benefits, correct
Answer: The fat is monounsaturated which is heart healthy. The 749 polyphenol count is also very healthy. Most olive oils have polyphenol counts of 100-250. This olive oil has a strong peppery flavor. It is not fruity. To me, this is one of the best tasting olive oils I have ever had.
Question: When harvest 20/21 become available
Answer: Hi thank you for reaching out. Currently the box you see is for the 20/21 harvest and is as fresh as can be. We also have the bottle available on a separate listing, search for item “ B08NMSYDNZ” that should take you there. If you have any other questions please do not hesitate to ask. Thank you-Raphael Bondi-The Olive Trading Co
Question: Is this olive oil organic
Answer: Hi! Thank you for reaching out. This bottle from Oilala is not organic. We will have the organic line in the near future. Thank you - Raphael Bondi - The Olive Trading Co.

Answer: Hi, Thank you for reaching out. We have taken down the chemical report for the box, as this is the 2020/21 harvest box which is brand new. We do not have the Chemical analysis for the new harvest as of yet. As soon as we have the new harvest poly count, we will post it. Thank you-Raphael Bondi-The Olive Trading Co.

User questions & answers

Question: What is the harvest date on this
Answer: Light green color.
Question: Is this 2018 harvest
Answer: C60 does not "dissolve". If it could be dissolved, it would no longer be C60. C60 is a soccer ball shaped carbon molecule, also known as buckminsterfullerine. Fullerines occur in many natural processes, usually involving high heat levels, such as the burning of wood or paper. So fullerines are soot. Soot cannot be "dissolved", but it can be diluted or suspended in fluids. Nano particles made out of anything can be diluted or suspended in fluids.
Question: Does this have the california olive oil council certification mark confirming that is is 100% california olive oil
Answer: The saturation limit for carbon-60 dissolved in olive oil is between 0.8 to 0.9 grams of C-60 in one liter of oil, so the amount of C-60 in the oil will be 0.08 to 0.09 grams per 100ml bottle. This is what all sellers of C-60 in oil provide. Typically, the manufacturer of the oil will start with a greater quantity of C-60 powder (for example, 5 grams per liter) in order to guarantee that as much C-60 as possible is dissolved in the oil. After two weeks of stirring they will end up with an oil that has the 0.8 to 0.9 grams per liter dissolved, and roughly 4.2 to 4.1 grams of undissolved C-60. The undissolved C-60 is then removed by using ultra-centrifuges and filters, before the saturated oil is shipped to the customer.
Question: Is this harvested by hand
Answer: Start with a tablespoon in the morning on an empty stomach. Also, you might try watching the C-60 YouTube video with K. Elmer. His series is very good.
