Question: Is this oil better for cooking or dipping
Answer: This product has not been filtered. Therefore, chances are you can see a slight sediment or cloudiness at the bottom of the bottle. Filtering extends the shelf life of olive oil, but may decrease the heart-healthy poly-phenols and aroma profile of the oil. As an artisan producer we produce smaller batches of olive oils and able to sell them quickly. Instead of filtering, we settle down olive oil naturally in a stainless-steel tank for at least 1 month which is called racking. This process allows the small particles like olive pits or flesh to settle down at the bottom of the tank, which we never bottle. This process allow us to preserve all the polyphenols and full flavor or our artisan olive oils.
