Question: Is the weight the drained weight
Answer: I'm not sure, but I don't think it's the drained weight. I believe the stated weight (48 oz., I think) includes the brine, but there are ALOT of olives in the container. I agree with "Amazon Customer" that the Roland brand Alfonsos tend to be mushy, but only if left in the brine in which they're packaged. I've ordered 3 containers and learned to drain most of the brine from the olives a day or two after receiving the shipment. This keeps the texture firmer, and the olives don't lose their flavor. I think the texture issue will occur with any pitted Alfonso.I recommend looking for Castella brand Alfonsos with pits if the texture is still an issue for you. A couple of our local stores carry this brand. However, I love the convenience of the pitted Alfonsos so I keep coming back to Roland brand.

Answer: No "safety-seal" on mine either - didn't worry me though. As far as a "sound"... I didn't expect any. I've bought plenty of olives out of open 5 gallon buckets at markets. They're olives. They're cured. They're not going to rot.

Answer: Hi, Murtaza -- As far as I know, the preservative is potassium sorbate. It prevents fermentation. I have never seen vinegar of any kind listed for these particular olives, although I know some other brands use red-wine vinegar. I think these olives contain only 3 ingredients: Alfonso olives, water and potassium sorbate. I know my local halal grocery store sells them, if that helps. Jan
