Answer: | These nibs are raw. The flavor is much improved by toasting. I ground the nibs in a coffee grinder, then stirred them in a pan over medium heat until they were dark and smelled chocolatey. They did not melt. Toasting brings out the chocolate flavor, and reduces the acidic/raw flavor notes. I brew ground nibs in a tea pot using a in-pot strainer and 1 tbsp ground nibs / cup of water for 15-20 minutes. |

Use them in hot chocolate (doesn't sink to the bottom like most cocoa). Great for cooking with. Surprisingly not bitter like most. Probably results of having a lot of fat content. |

All the new packages will have the california new law P65 warning as they are complying to a law but it applies to water. The soil the cacao is growing in has a certain amount of minerals. The P65 new law is requesting them to let people know that some minerals in high concentration could be dangerous to your health. It doesn't mean this product has any of it. I read the 3rd party report and can vouch for its quality...i have been ordering this product for many years and as a nutritionist i am extremely careful with what i ingest. |

Answer: | GREAT question because the packaging doesn't say where it comes from. Certified by a company in CA and distributed by a company in AZ but nothing on the label stating where it was grown. I may reconsider using it although it does have a good chocolate flavor. The uncertainty of where it came from leaves me uncomfortable. Thanks for asking this question. |

Answer: | According to foodensity.com, by 2025, the warning labels can be avoided only when cadmium is reduced to less than 0.800 ppm. 1.145 ppm is about 43% more cadmium than that limit. The current limit (in 2019) is 0.960 ppm. 1.145 ppm is 19% over that limit. In increasing order of mean cadmium content, Africa has the least, followed by Asia, then by Latin America. The African-origin cacaos are very nearly 0. That said, the caveat is that cadmium uptake differs by factors like the soil acidity, soil zinc content, and cadmium in water. After you eat it, cadmium absorption may only be around 3~5%. The really scary thing is how long cadmium hangs around in the body, and that’s probably why California and the EU sets such high standards for the heavy metal. |

Answer: | I have not had the sweet nibs. I avoid all glycemic raising sugars if I can. I love these but they are not sweet. I add them to yogurt and use stevia. The longer they sit in the yogurt the softer they are. I saw a post somewhere about mixing the raw cacao powder and these together. That sounded good too. I buy these because they are raw. Not heated above 105 degrees. |
