Answer: | You can find the percentage of cocoa butter (fat) from the nutrition info on the back. Just divide the fat per serving by the serving size. The serving size at the top of the label is 6 grams, and each serving has 1 g of total fat. So 1/6 is 0.166 which, is 16.6%, which rounds to about 17%. From what I've read, most of the cocoa butter is removed when making the chocolate liquor and then the cocoa powder. But as far as I know, the remaining fat in the powder is still cocoa butter from the bean and not added fat or another type of fat.So the 17% fat in this cocoa powders is probably all cocoa butter. Hershey's Cocoa Powder that I've bought is 10-13% cocoa butter, which is about average I believe. Rodelle says of this cocoa, "It contains one of the highest levels of cocoa butter on the market, ensuring superior flavor." I've seen cocoa powder with 22-24 percent fat, so Rodelle's description is somewhat of an exaggeration. And while other cocoa powder brands put the percentage in the description, Rodelle just wants you to believe their description without printing the cocoa fat content on their label. |

Answer: | Yes, it is not raw cocoa powder which can be somewhat acidic with off tasting acids like acetic acid. There are two main methods to balance the raw cocoa that makes it taste better to most people. Dutch processed cocoa uses an alkali to neutralize the acids. Rodelle Baking Cocoa is Dutch processed with alkali (baking soda is an alkali). Milk chocolates are made by adding processed milk products that are alkaline. It is excellent! If you are looking for a darker color, use Valrhona or 100% black chocolate. (Black chocolate by itself is black and a bit bitter, but think Oreo cookies.) Take a whiff of the cocoa powder and you will have an idea what it will taste like. Always use quality brands, different brands for different recipes.
