Answer:	All of our products are choice or higher. These ribeyes were all graded choice. We offer other packages that have prime ribeyes in them too.

Answer:	I believe they opt, you should ask them, not to have grading performed. They pass the savings on, I suppose, to the consumer. What I have received I would consider to be predominately at the upper end of the "choice" grade with "prime" in the mix. All the beef is well marbled. "Higher Choice" (not an official grade) is a term I have heard cutters use and I would apply All I can really attest to is that it is the most flavorful of any that I have found available excepting some Irish beef I've experienced.
