Question: good for ginger ale
Answer: I have not tried making ginger ale with this yeast. If you are trying to make a non alcoholic soda this probably isn’t your best bet. But this is one of my favorite yeasts for hard cider making it adds a bit of an oatmeal flavor after fermenting so it may not be great for ginger ale but it is worth a shot.

Answer: I haven't tried brewers yeast for bread but have used distillers yeast for bread. Many people interchange bread and distillers yeast. I tried distillers yeast for a high gravity beer.
Question: Anyone know the alcohol tolerance of this yeast is
Answer: I believe the documentation says 12%, and brewers cruise through 10% easily, usually using an existing yeast cake. I have not personally brewed this high.
