Answer: | It varies, some time they do and so forth. I like to run cool water through them to remove any bile, and a good wash to remove salt. After that I soak them in lukewarm water with 1 or 2 tablespoon of vinegar for 45 min to an hour. Then giving them a good thorough rinsing and after all that you should be ready to start the stuffing process. |

Answer: | I've used these for 2 batches of Tuscan salami (the ones in the classic Ruhlman/Polcyn "Charcuterie" book) and they came out GREAT, my first two attempts ever. I fermented them with dextrose as the 'food' for Bactoferm T-SPX fermenting culture, then cured/dried them using Bactoferm Mold 600 to get a very nice white mold bloom on them. They came out, to my pleasant surprise, just like "the real thing" - very yummy tangy Italian-style salami. The casings are very nice quality, only a few 'whiskers' here and there. Good consistent diameters, about the size of a bratwurst you'd grill on a grill. Good lengths - I don't remember exactly what but they were pretty consistent, i.e. there weren't some long and some fairly short. I think only one had a hole in it and it was near the end - and could've been my fault while I was trying to get it open to rinse out. They were quite clean already, it seems to me - not at all stinky (although I've got nothing to compare them to). Highly recommended. |

Answer: | Hi Amber, So I guess the answer is sort of yes and no. What I do is rinse them off. Soak them for a while, 15 or 20 minutes and then use them. I keep them in a shallow container full of water. When I am done, I drain them and add fresh water to cover them. Then I put a lid on the container and stick it back in the fridge. They are supposed to keep for a week before they begin to deteriorate. I have kept them a little longer and they were fine. I have also kept them shorter than that, then drained all the water and repacked them in salt and stuck them in the fridge for a couple weeks. Then you can pull them out and use them again. I try not to have them out of the fridge all that long. And when I do have them out, I drain them and add fresh water. Right before I use one, I run fresh water through it and just make sure it's really well rinsed. Being pork, I always give them the sniff test. My thinking is if they start to go bad, I would expect a smell. I love these casings. I have made about 125 lbs of sausage in the past couple months and have only found 2 small holes in all of that time. I hope this was helpful. |
