There are five key ways to determine the highest quality of matcha:
Origin: Japan.

Color: the 20 days of shade force the plant to overproduce chlorophyll, which is what makes the tea a vibrant emerald green. Low quality matcha is pale and yellowish.
Texture: matcha is milled using granite stone mills. The result is a silky texture, with an average particle size of 10 microns (0.01 mm).
Taste: the L-theanine produced by an excess of chlorophyll gives the matcha a sweet taste and aroma of fresh grass. Low quality matcha tends to be bitter and astringent.
What is the difference between Ceremonial Grade and Fine Culinary Grade?
The tea variety or cultivar.
Our Fine Culinary Grade is 100% Saemidori, which means “clear green,” has a brilliant green liquor. Taste is very good due to its low bitterness and lack of astringency. The amino acid content is the highest of all Japanese cultivars.
Our Ceremonial Grade is a more complex matcha and contains tea leaves from four different cultivars: Asatsuyu, intense green color and reduced bitterness, Saemidori, Okumidori and Ya-bukita both have an elegant aroma and a strong umami taste.
How is matcha different from regular green tea?
1 cup of Matcha is equivalent to 10 cups of high quality green tea in terms of health benefits. This is because you are imbibing the actual tea leaves instead of just a green tea infusion, as well as the the high levels of L-theanine produced by the tea when shaded for twenty days.
Organic Matcha
A great cup of tea requires three elements: great tea, water and a tea master (you). Use the correct dose: 1/3 of a teaspoon is enough to start with. A larger quantity will make your matcha bitter. A well prepared cup of matcha is creamy and sweet. Water: add a little bit of water and whisk until any lumps dissolve (matcha particles are extremely small). Add more water up to 3 FL OZ and keep whisking making W’s, not circles, until it is frothy.
Using the right water temperature (160ºF to 170ºF) will extract the matcha sweet soluble components such as L-theanine. Using a higher temperature will bring a high amount of the bitter and astringent components to your cup such as caffeine and catechins.
The traditional Japanese Matcha bowl, whisk and spoon are desirable but not mandatory to start. If you enjoy Matcha you can then obtain them.
Matcha Green Tea Powder
Source of antioxidants: When growing the leaves that are destined to be ground into matcha, the tea plantation is kept in shade for two to three weeks before the first flush of spring. This absence of light multiplies the amount of antioxidants and polyphenols in the tea leaves. Answer: | If you're asking about how to prepare it for drinking...You need a chasen (whisk) and little matcha scooping spoon. (see something like: http://www.amazon.com/ThinkBamboo-Cooking-Tea-Whisk-chashaku/dp/B003VSEG7Q/ref=pd_sbs_k_1) The basic idea is that you put a scoop or two (or more) into a bowl, and then add hot water and whisk it vigorously until it becomes foamy, I think. I am no expert, but that's how I do it and it seems to work and taste pretty good. I don't think you have to worry so much about the very precise, ceremonial details with this matcha though as it is culinary grade not ceremonial, but it definitely does the trick! |

Answer: | Culinary quality matcha is a "lower grade" than normal, ceremony grade matcha. In other words, not QUITE as much painstaking attention is taken to ensure the top-of-the-top, cream-of-the-crop flavour. Ceremony grade matcha will cost at LEAST $20 an OUNCE, and that's from some general retailer such as Teavana. Culinary grade doesn't mean it's bad...but sometimes it can be. Culinary grade is about 6-8 dollars an ounce. I haven't yet tried this kind, but it's come highly recommended to me. (And no, it isn't just for baking. It's just...not quite suited for drinking alone. Not smooth/sweet/fresh enough. Smoothies, lattes, cookies, ice cream...they should work just fine with this. Matcha banana smoothies, matcha cookies, and matcha ice cream are heavenly. :D ) |

We additionally test for the full spectrum of common heavy metals (Arsenic, Cadmium, and Mercury) as well as Fluoride, and similarly these were not detected below the detection limit of 1ppm.We additionally have the labs perform radiation tests and use a gross Alpha/Beta/Gamma test that comprehensively detects radiation contamination (as opposed to testing for just the most common radioactive isotopes, which is all most brands do). Sift 1 gram of Matcha
Step 1: Sift 1 gram of Matcha Organics Ceremonial Matcha Green Tea into a tea bowl to prevent clumping. 1 gram of matcha equals about 1/2 a teaspoon.
Add a little hot water
Step 2: Pour approximately 2 oz of almost boiling water over the dry Matcha. Lightly combine and let the mixture cool for a minuet.
Whisk until nice and frothy
Step 3: Using a bamboo whisk called a chasen whisk the mixture in a loose "W" or "M" shaped motion until the Matcha is foamy and frothy.
Add hot water to you liking - Enjoy!
Step 4: Some like it thick and strong and some like it thin and light. Add additional hot water to YOUR liking and ENJOY your Matcha!

Answer: | I think most, if not all, of the sugar is from the 2 3/4 coconuts used in one 16.9 oz of Naked. Note: the label says no "added sugar", where fruits in general have naturally occurring sugar.. Mind you, not all coconuts taste the same...coconuts from Africa vs Asia vs Central America may not be as identical in taste. But, I wouldn't expect a vast difference either. And, coconuts are certainly not all identical in size, therefore nutritional content. Moreover, WebMD says there are about 1.3 grams of naturally occurring sugar per 1 oz of coconut water. So if I am thinking about this correctly, you end up with about 21 grams of natural sugar in one 16.9 oz of Naked. The math adds up to a bit more than the content but, again, coconut size, maturity, and region can make a difference in the natural sugar content (grams per ounce) in one coconut. Feel free to correct my nutrition math if it's wrong. |
