SAMPLE RECIPE: Frenchies

1. Pour 170 grams (1 cup) water that’s at 68 to 77°F (20 to 25°C), instant dry rapid rise yeast, starter, and poolish into a large tub or mixing bowl. Add the flour and the pilsner malt into the mixture. Mix the ingredients in the bowl until they come together. Cover the bowl or tub and let rise for 20 minutes.

2. Add the salt and knead the dough until the salt is totally incorporated. Let the dough rise for 1 hour, and then fold. Let rest for 1 hour.

3. Using a dough scraper, turn the dough out onto a lightly floured surface. Using a bench scraper, divide the dough into 200-gram pieces. Pre-shape the dough into logs. Cover the logs and let them rest for 30 minutes.

4. Shape the logs again into tighter logs or small sandwich-style baguettes. Set up a linen cloth onto a half sheet pan or bread board.

5. Place each baguette in the folds to rise for 20 minutes and place the baguettes in the refrigerator for 1 to 2 hours. Meanwhile, preheat your oven to 470°F (243°C).

5. Place each baguette on a half sheet pan lined with parchment paper. Make three slashes into each baguette using the razor blade. Using the spray bottle, spray cold water on top of each baguette, making sure to coat the entire surface.

6. Bake the baguettes for 15 minutes, rotate the sheet pan, and bake for another 5 minutes or until the baguettes are golden brown. Remove from oven and enjoy!
