1. Preheat the broiler to medium – high and remove the grill rack. Poke the eggplant all over using a fork, put it into the grill pan, and broil 2 inches away from the heat source for 30 minutes on each side, or until soft and blackened all over and almost falling apart. Let cool.

2. Cut the eggplant in half lengthwise and scoop the soft flesh away from the blackened skin and into a bowl, using a large spoon. Discard the skin. Mash the flesh using a fork, then stir in the lemon juice, garlic, tahini, salt, and 1 tablespoon of oil.

3. Spoon the dip into a serving bowl, then drizzle with the remaining oil and sprinkle with the parsley, if using. Serve with the pita breads and cucumber sticks, if using.
