HOW TO USE THIS BOOK

This is like a choose your own adventure book . . .

1. Pick a pasta machine. Do you want to use your sheeter? Do you have an extruder? Do you feel like making cavatelli? Then skip directly to that chapter.
2. Pick a pasta dough for that machine.
3. Pick a pasta shape. If it’s a stuffed shape, pick a filling.
4. Pick a sauce. I make recommendations for pasta shapes and sauces, but feel free to mix and match as you like.
5. Cook, eat, and repeat!

Answer:	The Marcato 180 is just a slightly wider version of the Wellness 150. The operation is identical and these machines are very easy to use. There are websites and YouTube videos. Throw this dough away.If you want a good dough recipe, try this one (there are many, so experiment):2 Cups Semolina, 2 Cups All purpose flour, 6 medium eggs, 1 Tablespoon Olive oil, pinch of salt. Answer:	The Marcato 150 comes with a dual sided attachment for making Fettuccini or Spaghetti. There are other attachments available for Linguini, Vermicelli, (Thin Spaghetti), Cappelinni (Angel Hair). You can also make Lasagna or Ravioli. How long your noodles are is up to you. When you "roll out" the dough through the rollers, you start at 0 (rollers wide apart), then dial up the numbers until you get the thiness you need. The dough will get longer as you roll it out, so just cut the dough to the length you'd like. For Spaghetti or Fettuccini, I usually go to "7", skipping every other number. I have no problem keeping the rollers clean. The key to making great pasta is a dry dough; elastic, but not wet or sticky. You just lightly brush off the rollers, because the dough will not stick. If it does, let the dough dry, then it will brush off easily.Easy recipe for pasta dough:2 cups Semolina flour2 cups All Purpose flour6 eggs2 Tablespoons Olive Oilpinch of saltI let my bread machine do the work, but you can knead it.....the important thing is to wrap the dough in plastic, and let it rest for 30 minutes.Depending upon humidity, you may need to add 1 or 2 tablespoons of water. Answer:	I'm guessing you're talking about the Pantry box. It doesn't matter how full the box is regarding prices. Your Pantry shipping fee is same no matter how full box is. However, Pantry always has items that count for free shipping. You need to buy at least five of those products (there are quite a bit of selection) for your whole box to be shipped free. Orphan One Hundred Cookies

I got this cookie recipe with the wacky name from my Aunt Laura, who can’t remember who gave it to her. So these cookies have no home and no mama. They’re chewy, crisp, sandy, rich, buttery, and light, all at the same time. It’s hard to stop eating them, so it’s a good thing the recipe really does make a hundred cookies. They have a secret ingredient: crunchy Rice Krispies.

Directions

Set the oven to 350 degrees and adjust the rack positions to the top and lower thirds. Line two baking sheets with parchment paper.

Mix together the flour, baking soda, cream of tartar, and salt in a bowl and set aside.

In a large bowl, with an electric mixer on medium speed, cream the butter and the two sugars until light and fluffy, 3 to 5 minutes. Add the oil, egg, and vanilla and mix well. On low speed, add the flour mixture and then the remaining ingredients one at a time, beating until everything is mixed in well.

Measure out a tablespoon of cookie dough, roll it into a ball, and place it on one of the cookie sheets. Repeat to make more cookies, leaving at least 1-inch between them. Flatten each cookie with a fork to about 1/8-inch thick.

Bake, rotating the sheets at the halfway mark, until the cookies get slightly golden around the edges, 12 to 14 minutes. I like them chewy, so I cook them closer to the 12-minute mark; if you want them crisper, bake for 14 minutes. Don’t over-bake. Cool the cookies on the pans for 5-minutes, then turn out onto a rack to cool completely. Let the baking sheets cool completely between batches and repeat with the remaining dough.

Store in well-sealed tins.

Tips

1. The bigger the cookies are, the chewier and softer they’ll be.

2. If you want to make smaller cookies, use a teaspoon of cookie dough rather than a tablespoon. The smaller cookies bake much faster; start checking at 9-minutes.

3. If your crisp cookies get soft, you can re-crisp them on a baking sheet in a 300-degree oven for about 5-minutes.
