Answer:	Yes, the Cutting Edge culture would be great to use when making Ginger Bug. The sugar in the Ginger Bug provides food for the beneficial bacteria / microorganisms. Using the Cutting Edge culture ensures the good probiotics are present in the recipe.
Question:	You said that the product has different strains, What is the name of your strains
Answer:	Thank you for writing. These are the ingredients:Active bacteria strains (LB. plantarum, Ln. mesenteroides, Pc. acidilactici), organic tapioca sugar.
Question:	How many times can I reuse the brine before it no longer works? Is it like a yorgurt or sour dough starter that keeps on going, or is it time limited
Answer:	There is not an easy answer to your question. You can reuse a brine so long as the salinity of the solution remains at a safe level and it continues to provide the desired flavor profile. The natural moisture in your product will dilute the salinity of your solution. You may start with a 3% brine, but moisture in the product will dilute this by the end of fermentation. I routinely add a small amount from a current ferment if it has a great flavor profile to sort of kickstart the fermentation in the direction that I want. But it seems to only last about 4-5 generations before it starts to drift beyond what I like and I need to start fresh. But this is also variable depending on the fermented item. Year to year crop variances with moisture and flavor and natural wild bacteria play a part.
Question:	Is this the starter culture I should get for legumes? (black beans, soy, lentils
Answer:	I use this starter culture to ferment cooked black beans with raw onion, garlic, and jalapeno. My ratio is approximately 90% beans 10% onion, garlic, jalapeno. I don't believe the small amount of fresh vegies in this recipe is enough to make a great ferment, I believe it's the starter culture. I have made this recipe several times with this starter and all have turned out wonderfully.

Curd cheese is not only rich in essential vitamins, but also easily absorbed by the body, so this product is the most valuable for children and the elderly. Curd cheese has dietary properties, resulting in a part of many diets for weight loss and "fasting days." The cell concentration of at least 10⁹ CFU / g Lets get milk product dense viscous consistency with probiotic properties and clean, mild flavor and aroma. Preparation steps: 1. Warm milk to 80°C. Cool it down to 32° -38° C. 2. Add 1 g of dry culture for 1 liter of milk. 3. Stir very well /use electric mixer or egg beater/. 4. The resulting mixture is poured into a thermos and kept for 8 - 11 hours. The ready clot then is carefully poured into a pot and heated on low heat (water bath) to a temperature of: Option 1 - 34 - 36 ° C for soft cheese Option 2 - 45 - 55 ° C for granular curd Pour the heated clot in a thick cloth (gauze) to separate whey from curd, let the curd dry out by hanging it and letting it drip. Question:	It’s been almost 48 hours. Mines hasn’t fermented yet. Can anyone tell why. I used 4 cups with one pack
Answer:	Hi! The first time I used a culture starter, it did not work as expected either. I used coconut milk, let it sit in a dark place with a temp of 72 F, for 18 hours. It did not seem to work. I put it in the frig and I called Cultures for Health. They told me to take 1/4 cup of this milk and start a new batch with new milk. I did so and then waited for 24 hours. It did smell a bit yeasty and tasted sour and thickened some. So it worked. I did 4 batches , keeping 1/4 cup of cultured milk and starting a new batch each time (no new starter needed). It's best if your milk is not too cold to start with, the room temp is 72 F and above, a dark place, and leave it for 18-24 hours. After the first batch it took maybe 12 hours to work. Maybe the starter needs time and coaxing??? You could chat on culturesforhealth.com site. They will lhelp you with this. Good Luck.
