12 best gas smokers
Gas smokers are cooking appliances used for smoking meat, fish, poultry, and other foods. They are a popular choice among outdoor cooking enthusiasts and provide a convenient way to infuse smoky flavors into various dishes. Here are some key points about gas smokers:
Cooking Method: Gas smokers use propane or natural gas as a fuel source to heat a burner element, which produces smoke when wood chips or chunks are added to a dedicated tray or box. The smoke is then used to flavor and cook the food indirectly.
Temperature Control: One of the advantages of gas smokers is their ability to maintain consistent cooking temperatures. They typically come equipped with temperature controls that allow users to set and adjust the cooking temperature easily. This precise temperature control is crucial for achieving the desired results in smoking various foods.
Smoke Generation: Gas smokers use wood chips or chunks to generate smoke. These wood pieces are placed in a designated compartment within the smoker, often referred to as a wood chip tray or wood box. As the gas burner heats up the wood, it releases smoke, which surrounds and flavors the food.
Versatility: Gas smokers can be used for smoking a wide range of foods, including meats like brisket, ribs, pork, and poultry, as well as fish, seafood, and even vegetables. The ability to adjust temperature settings makes it possible to smoke foods at low and slow temperatures for extended periods.
Ease of Use: Gas smokers are generally considered user-friendly and convenient. They don't require constant monitoring of fuel sources like traditional wood or charcoal smokers. Users can simply set the desired temperature, add wood chips for smoke flavor, and let the smoker do the work.
Size and Capacity: Gas smokers come in various sizes and configurations to suit different cooking needs. Smaller models are suitable for home use, while larger ones are designed for cooking larger quantities of food, making them popular for gatherings and events.
Accessories: Many gas smokers come with additional features and accessories, such as built-in thermometers, multiple cooking racks, and water pans. Water pans help maintain moisture levels in the cooking chamber, preventing the food from drying out.
Safety: While gas smokers are generally safe to use, it's essential to follow safety guidelines when operating them. This includes proper ventilation and keeping the smoker away from flammable materials.
Maintenance: Regular cleaning and maintenance are necessary to keep a gas smoker in good working condition. This includes cleaning the cooking grates, removing ash and debris, and checking for any gas leaks or other issues.
In conclusion, gas smokers are a convenient and efficient way to smoke a variety of foods with precision temperature control. They are suitable for both novice and experienced cooks who enjoy the unique flavor and tenderness that smoking adds to dishes. Whether for home use or larger gatherings, gas smokers offer a versatile and flavorful cooking option.

User questions & answers
Question: | The lowest temp I got with knob set at low, with no water and empty in the smoking chamber is 235 degrees. Without water, what temps did you get |
Answer: | Used mine once. With water in one tray, on low, in full sun, ran at 200°. |
Question: | The extra tray for water where do you put it on the lower rack or where the other tray is first time doing this |
Answer: | I put it on the lowest rack accessible from the upper door. |
Question: | Can the racks be removed and meats hung? Does it have a hanging ring in top |
Answer: | The racks can be moved and removed. I've not seen any hanging hooks or rings on which hooks might be hanged. |
Question: | How long will a propane tank last with this one |
Answer: | I came up with a crude way to estimate how much fuel I have used thus far. Propane weighs about 4.24 pounds per gallon. The tank weight is about 17 pounds. I have run my new smoker for about 12 hours so far and have used about 4 pounds, and have about 9 pounds remaining, so that rounds out to be about .33 pounds per hour, and my smoker was set at the lowest flame setting. So I have about 27 hours remaining in the tank.A word of caution about tank exchanges! I had to exchange tanks because mine was too old, so I exchanged 2 tanks. Upon weighing each, I found that there was only 13 pounds of fuel in each tank. So, keep that in mind if you use the exchange program. When you refill a tank, you should end up with about 20 pounds of fuel +/-, so it is pretty obvious that while the exchange program is often more convenient than going to a refill station, you will get more fuel, and longer use out of a tank that you have had refilled at a fill station.I used a bathroom scale, so my results are not perfect, but should give you an idea of what to expect. |

User questions & answers
Question: | Are there separate trays for chips, water and drip pan? Three trays total |
Answer: | There is a "chip pan" and "water/drip pan" and a separate drip pan on the bottom of the unit, below the burner. The water pan catches most of the drippings and that's why I call it a water/drip pan. |
Question: | How long does the wood last in the tray |
Answer: | Depending on your temperature the wood chips will last any where from 1 hour to a 1 1/2 hours. |
Question: | does the smoker tray pull out easily after the unit is heated up |
Answer: | It pulls out VERY easy. |
Question: | Can this be used as a grill and or for baking |
Answer: | Not mine and I feel that the 'Pit boss' has misled us with statements and pics stating that it CAN be used as an oven for baking pizzas, breads etc in pics where my new 77435 won't get above 310f [empty]. I'm currently trying to adjust the air intake valve to get a decent flame, but I doubt even with a perfect blue flame and slightly yellow flame tips would achieve a decent bake temp. They do state that the 77435 burner is rated at 13,000 BTU, which is kinda low to begin with. But it does make a great long slow low temp smoker........... |

User questions & answers
Question: | vs 40 inch models |
Answer: | i had a 30" for several years and enjoyed it but the 40" holds so much more meat and not much more in price. i feed a large crowd at Thankgiving and the 40" is perfect. |
Question: | can this Masterbuilt be adapted for natural gas |
Answer: | Yep converted mine for free... unscrew the regulator knob unit on the bottom of the box, unscrew the gas orfice from the unit and drill it out with i think i used a 9/16 bit. |
Question: | temp level |
Answer: | Two ways to regulate the temperature. One is the level of the gas which you regulate by the dial mounted on the front. The other way is by adjusting the vent mounted on the back of the smoker. Temp gauge goes up to 400 degrees, but I smoke somewhere between 250 - 300 degrees. |
Question: | Would you recommend the 30 in or 40 in smoker |
Answer: | This all depends on what you are smoking and how much at one time, I have the 30" smoker and have always had enough room cook what I needed. You can pump out a lot of food with the 30". I usually cut my racks of ribs in half, and can do about 3 full racks at one time. Hope this helps... |

User questions & answers
Question: | What is the cooking time vs frying, frying being 3.5 min per pound |
Answer: | 10-12 minutes per pound but there is no preheating time required. Having done deep fried and using the Big Easy, Total time is about the same. |
Question: | How does this compare to charcoal grills? We love steak, chicken and chops... will we be disappointed |
Answer: | This will be a great grill for you,.. I suggest you review the manual on how it sets up. If you are cooking for more than 4 I suggest buying another insert for the grill rack, again, do some online research. The meat will remain moist! I bought mine to use as a smoker but not as impressed with that function as I cannot get the temp to stay down to 210-225. |
Question: | what size propane tank do you use |
Answer: | Hi, I don't know the size of the propane tank but it is the standard size that you get from Blue Rhino, you give an empty and get a full one for approx. $20.00. Also, do yourself a favor and never use a bristle grill brush. I took a bristle out of my mouth while eating a hamburger, then I closely inspected the grill and saw many trapped on the lower grate supports. Charbroil makes a red nylon one they recommend. Google grill brush bristle injuries, you won't believe it. I had no idea. I am trying to tell everyone I can. |
Question: | Someone above wrote the temp goes from 325-450, is that true you cannot bring it down to 205 for slow smoking |
Answer: | Use the water pan as mentioned in other replies, but more importantly, use at least one good probe thermometer. The lowest I've had mine down to for smoking was 215, and it took a lot of work to get there. I added a true fire brick to the bottom of the basket as a heat sink as well as the water pan, and cracked to lid about an inch. ( shouldn't have to do that according to the owners forum). Also, this was in Feb. in PacNW, on a covered and sheltered deck. So , that all helped. As for grilling and roasting, remember that the owners manual tells you to run with the lid open. Again, a quality probe thermometer comes in handy here. Bottom line, don't be afraid to experiment. The 3 in 1 big easy is a great choice for most casual and occasional users. |

User questions & answers
Question: | Does this unit include the four leg kit that raises it up |
Answer: | This smoker includes the pictured legs. |
Question: | Can the door be reversed |
Answer: | The door on this smoker is not designed to be reversed. |
Question: | how many rack does it have |
Answer: | i kneed to order 2 racks and 1 back leg who can i call?????? |
Question: | I'm new to smoking and need something for indoor use. Can this be used indoors |
Answer: | No. The smoke and other invisible fumes (carbon monoxide) are not safe to breathe. This needs to be used outdoors. If the seal around the door was improved, you could maybe justify using it in a garage with some duct work attached to the vent in the back and routed safely outside. Do not use this in an area intended for continuous occupancy. Do not use it near anything flammable or combustible. |

User questions & answers
Question: | What is the temperature range |
Answer: | Max temp it can be set for is 275 degrees, will hold temp within a few degrees. |
Question: | Does it have a pan to add water/juice etc. during cooking |
Answer: | Yes. Water pan is large enough to smoke a long time. |
Question: | How many years of use is realistic to expect from this smoker before it breaks |
Answer: | I've had the version of this smoker (one generation earlier) for 7 or 8 years. I've kept it outside on the deck the entire time with a Masterbuilt smoker cover. I use it at least a dozen times a year and put only a modest amount of effort into care. The most important care factor is making sure it dries out after use. I wipe the gaskets but for the most part leave the interior as is (except when I cook something really messy). AFTER I finish I run it at max heat (275F) for about 30 minutes with the vent open to cook off water and bake in residual fat (seasoning). It's that baked in fat that really protects your appliance more so that any amount of elbow grease! (you see what I did there :) Results: Mostly due to failure of the smoker cover (which I have since replaced) water was able to get in. Even before that some rusting of the wood chip pan was occurring. I had a common problem with the grounding of the heating element causing electrical failures (popping my GFI) which I replaced with a significant amount of effort and several scraped knuckles. I've read that this is much easier in later models. So I'd say 10 years is reasonable given modest proper care (most important of which being to cook the inside dry after use!). And that's 10 years of freakin awesome smoked meats with almost no effort maintaining the correct heat. Turn it on, go to work, come home to BBQ. |
Question: | How often do you add wood chips? And do you soak them |
Answer: | i have time to use the unit twice, once with chips, soaked about 30 minutes, and once without. When I used chips, I added new ones about every 30-40 minutes. |
