1. Marinated Cucumbers: Whisk together 2 tablespoons of sugar and 1/2 cup of rice vinegar in a medium bowl until the sugar is dissolved. 1. Combine the Lemon Pepper Rub ingredients. Toss the mushrooms, onion, oil and 2 teaspoons of the rub in a medium bowl. Alternately thread mushrooms and onions onto six 12-inch metal skewers. Finish each skewer with a lemon wedge.
2. Press the remaining rub onto the Beef Strip Steaks. Place the steaks and kabobs on a grid over medium, ash-covered coals.
