Just remember that would be the only weak point so the bolt and it's anchor point would need to be as big as (diameter) or bigger than the the chain. The preferable method would be to cut the chain at the halfway point link (use hack saw or grinder cut-off wheel) then anchor the 2 separate links at individual points on the trailer frame by welding or bolting (using the same sizing as mentioned earlier). Remember this is an important safety feature in case of separation from ball hitch. Also you haven't stated the weight of your boat and trailer so better to go big rather than go home in a wreck.
